Kerki maintains its drying and roasting operations in Ajara, the heart of Georgia's subtropical agricultural heartland, giving it access to a plentiful supply of fresh, locally grown fruits and vegetables. With its automated, high-performance production facilities, the company transforms more than 500 tons of raw material into nearly 70,000kg of dried fruit annually. In order to retain all of the fruit's naturally occurring flavor and nutritional quality, Kerki employs lower drying temperatures and longer drying times without the addition of preservatives or additives. To meet the demands from international markets, Kerki has obtained ISO:22000 certification for food safety and operational management and is working to increase its capacity by 10% annually. Additionally, seeking ways to minimize its carbon footprint and embrace renewable energy resources whenever possible, Kerki uses its biomass, the by-product of cleaning, sorting and drying, as a source of energy for its fruit drying processes.
