The fillet is sourced from farm assured steers and heifers of up to 30 months. All beef to be dry aged on the bone for a maximum of 21 days. Removed from the striploin. Fillet chain, fat and surface membrane removed. Tail squared. Hand elected to inhouse marbling score. Beefy aged aroma, followed by soft bite texture, a succulence, with a clean palate finish. Weight range: 1.5kg - 2.5kg
