Also referred to as the “Blue Cheese of the Middle East”, this Gourmet Cheese is made of pure Sheep’s milk and has a long tradition in the Levant in areas of Syria, Lebanon, and Palestine. The milk is turned into yogurt, then shaken to separate butter from yogurt. The resulting liquid is then heated to produce a white creamy cheese. This cheese is hung inside a cheese cloth to allow all liquids to drain. The cheese is then mixed with salt, spices such as Zaatar, chili, thyme and rolled into tennis ball shapes. The balls are then placed for several days to dry under the sun to get all water out. Once dry, the Shanklish balls are places in jars and left for couple of weeks in the dark to ferment. Hidmi Shanklish is best eaten mixed with chopped tomatoes and red onions together with olive oil. The mixture is then spread on warm pita bread and the flavor is exotic!
