The Sea urchin comes from the Rías Gallegas, the seafood markets of Fisterra, O Grove and Aguiño. It is a highly coveted delicacy that has been getting more and more recognition among the most demanding palates. We follow a very laborious and careful process with extraction and canning of the roe manually and always in its proper moment of the season, between January and March, to guarantee the best Quality.
