Cinnamon cassia is a spice obtained from evergreen trees growing in the mountainous regions and slope elevayions of about 300-1700m above sea level. The inner bark of the tree is very aromatic and flavorful due to its oil content. It's a spice that has a wide variety of cooking uses and mainly used as a ground spice, added to processed foods and baked goods.
