Fiordilatte is less humid and has more dry consistence, compare to the mozzarella that is more spongy. The structure influences also the uses of these cheese, the fiordilatte is more used as pizza topping and filling cheese because doesnt release much milk on the pizza compared to the mozzarella, and it is stretching better and is elastic.
