Niimi Fresh Caviar
The journey of domestic caviar production in Niimi City, Okayama Prefecture, Japan. The production began around 20 years ago. The Niimi Fisheries Cooperative Association, aiming to create a unique specialty product utilizing the pristine waters of the Takahashi River, embarked on the sturgeon breeding venture. After 12 years of dedication and experimentation, they successfully achieved caviar production.
