The Senatore Cappelli variety was “invented” just over a century ago by the brilliant agronomist Nazareno Strampelli. The name originates from Rafaele
Cappelli, then a senator, who granted him land near Foggia. King of durum
wheat in the 1960s Le Stagioni d’Italia helped give it a “second life” and redis-
cover a wheat with distinctive organoleptic and nutritional characteristics,
also proven by scientifc studies.
Starting with pure seed selected and certifed by SIS, Società Italiana Semen-
ti, we move on to our mills and fnally to the pasta factories where the 100% Ancient Italian Senatore Cappelli variety wheat Le Stagioni d’Italia pasta is born, bronze drawn to enhance and retain all the seasonings and expertly
dried to ensure it holds together well during cooking
Whole Wheat Pasta 100% Ancient Italian Senatore wheat Cappelli
variety is characterized by being naturally rich in fier and a source
of protein.
The whole wheat semolina is obtained by grinding the grains with-
out refiing or using additives. The bronze extrusion and slow dry-ing preserve the excellent quality of these grains, ensuring a supe-
rior taste and texture when cooked.
