ALAIN PASSARD
Alain Passard, born in 1956 in the village of La Guerche de Bretagne, discovered his passion for cooking alongside his gastronome grandmother, Louise Passard. His culinary journey began at Le Lion d’Or of Liffré from 1971 to 1975 under the guidance of Michel Kéréver, one of the rare "starred" Breton chefs of his time. After gaining valuable experience, Alain Passard's career took flight, earning two Michelin stars at Le Duc d’Enghien in 1980 and additional accolades at the Carlton of Brussels in 1984.
Renowned for his innovative approach, Alain Passard is a maestro of colours, perfumes, and flavours in the vegetable kingdom. His work with vegetables is not just culinary mastery but also an incentive to reconnect with the earth and embrace a new language and vocabulary. Ultimately, he established Arpège, formerly L’Archestrate, and on its tenth anniversary, Alain Passard achieved the pinnacle of culinary success with the prestigious third Michelin star.
