
Esben Holmboe
Chef Esben started a book project in 2014 where he sought to document and capture the first years of Maaemo. Chef René Redzepi wrote the foreword and finishing with the following sentence describing Chef Esben: “Esben has a special ability to distill an experience and present it perfectly on the table. A prescient mind, he seems to know where the world is going before the world itself does.” In 2020 after almost 10 years at the original, Maaemo entered its next chapter as it moved to its exquisite new location next to the Oslo Fjord in the heart of the city, offering guests an unrivalled sense of luxury and space. Maaemo regained their three stars in 2021 and retained them in 2022. Time Magazine has named him one of the 100 Most Influential Chefs in the World
