After graduating from The Culinary Institute of Las Vegas in 2007, he honed his skills under Chef Raimund Hofmeister (CMC/AAC). Chef Giovanni Ledon's journey took a momentous turn in 2009 when joined Chef Bobby Flay's team at Mesa Grill in Caesars Palace. In 2010, Chef Giovanni assumed the role of Sous Chef at Yellowtail Japanese restaurant in the Bellagio Hotel. Notably, Chef Giovanni has overseen the successful openings of several restaurants across Europe and the Middle East, including in Riyadh, Doha, and Paris.
