GIOVANNI PAPI
Chef Giovanni Papi, the Head Chef at the Michelin-starred Armani/Ristorante, embarked on his culinary journey in 2002 as an intern in Sardinia, Italy. After three years in mainland Italy, he expanded his expertise in France's Côte d’Azur under the guidance of Alain Ducasse at Hôtel Juana. His culinary career flourished with notable roles in France and Italy, earning a Bronze Medal at the Luxembourg Culinary World Cup in 2014. Chef Giovanni explored global culinary destinations, holding executive chef positions in Luxembourg, Australia, and China.
In 2018, he joined Armani Hotel Dubai as a Speciality Sous Chef, showcasing dedication to Italian cuisine. Recognized for his passion, he became Chef de Cuisine in 2020, winning the Rising Star Chef of the Year at the Hospitality Excellence Awards. As Head Chef since 2022, he represented Armani as a featured chef at Expo 2020 Dubai. Proud of his Italian roots, Chef Giovanni emphasizes regional ingredients, seasonal products, zero waste cookery, and believes food fosters cultural connections.
Chef Giovanni sees the kitchen as a realm of curiosity, influenced by childhood memories and experiences with world-acclaimed chefs. His extensive travels have shaped his understanding of diverse cultures, people, and cuisines. For him, cooking is a hands-on expression of respect for ingredients, creating memorable and connective experiences for those he serves.
