Hyunsoo is the only chef in the kitchen who is not part of the family that runs Ojina's parent company, Insung Corp. Having formally studied Korean cuisine, he decided to become a disciple of the Ojina family after encountering their food by chance, and moved to Jeju Island to learn from them. Over the past three years, he has learned everything hands on - from farming and preparing every ingredient to mastering the entire fermentation process.
Today, he works alongside the head chef and sous-chef as a key member of Ojina's kitchen.
