The Consortium for the Protection of Pecorino Romano brings together producers of Pecorino Romano PDO from Sardinia, Lazio, and the province of Grosseto. Since 1996, it has held the collective PDO trademark and protects and monitors the production and trade of Pecorino Romano PDO.
