The Prairie Farms Faribault Cheese Plant is home to the Caves of Faribault brand of specialty cheese. Caves of Faribault has preserved and perfected the traditional affinage cheese-making technique since 1936, making it the home of the first American Blue cheese. Today, the Faribault facility handcrafts a variety of cave-aged Blues and Gorgonzola cheeses under the Caves of Faribault brand.
