RAKKI™ Japonica Sweet Rice (glutinous rice) is also called Mochi Rice (もち米). The rice grains are opaque, shorter, and rounder than regular long grain glutinous rice. Because of its low amylose content, glutinous rice is sticky and does not harden when cooled. It is ideal for making deserts, mochi rice cakes, and Osenbei (お煎餅) rice crackers.
