Most pistachio exports are raw, in bulk, in one of the following forms:•    Naturally Open In-Shell Pistachios: Open in-shell pistachios are mostly exported as raw dried, in bulk. Meat content is about 54-59%, depending on variety and annual fluctuations. Used mainly as a snack, they are roasted and flavored in-shell. On average, over 100,000 tons of open in-shell pistachios are exported from Iran each year. The top five markets for this product are: the Far East, the Indian subcontinent, the Middle East, CIS countries, and the EU.  •    Pistachio Kernels: Obtained by shelling closed-shell pistachios, they can be consumed both as an ingredient in food and bakery industries and as a roasted snack. On average, around 16,000 tons of pistachio kernels are exported from Iran each year. The top three markets are India, the Middle East and the EU. •    Green Peeled Pistachio Kernels (GPPK): Obtained by harvesting unripe pistachios, GPPK is exclusively used as a garnish or ingredient in foods, pastries, chocolates, ice creams and sausages. GPPK has a long and distinguished history of use in European, Middle Eastern & Japanese luxury markets.
