Sliced smoked salmon fillet "à la ficelle"
This salmon fillet "à la ficelle" is hung by the tail and cold-smoked in wood-fired ovens ; this traditional method gives a more pronounced smoky taste.
It is sliced by hand, using accurate cutting skills to preserve the delicate texture of the flesh.
This salmon fillet, in variable weight between 1.3 to 1.8 kg, is smoked and prepared in our workshop in France.
