Sabatino’s story begins in 1911, in Umbria, Italy, when
Sabatino Balestra and his wife Giuseppina first experimented
with ways to preserve and share the fresh truffles of their
homeland. What started as a small family shop has grown
into a global leader in the truffle industry — yet the heart of
our work remains the same: deep respect for the land, an
obsession with quality, and the joy of sharing truffles with the
world.
Today, Sabatino combines time-honored tradition with stateof-
the-art innovation. With production facilities in Umbria and
Connecticut, 15 preserved production lines, and 20 truffle
plantations, we handle more than 300 tons of truffles each
year — carefully sourced, processed, and delivered to chefs,
retailers, and food lovers across the globe.
From Michelin-starred kitchens in Tokyo to family tables in
New York, Sabatino is trusted for authenticity, consistency,
