Dried ginger
Dried ginger, a name of traditional Chinese medicine, is the dried rhizome of Zingiber officinale Rosc., a plant belonging to the Zingiberaceae family. It is harvested in winter, with the adventitious roots and mud removed, then dried by sunning or low-temperature drying. When sliced fresh and then dried by sunning or low-temperature drying, it is referred to as 'Ganjiang Pian' (dried ginger slices).
