Sterlet Caviar
Sterlet caviar is derived from the Acipenser ruthenus, the smallest of the caviar-producing sturgeons. Native to the Kura, Volga and Ural rivers flowing into the Caspian Sea, the sterlet typically grows to 50-70 centimeters in length and weighs up to 7 kilograms.
