Chef Grégoire Berger trained in some of France’s most respected kitchens, including Le Pressoir, Le Domaine de Rochevilaine, and La Grande Cascade under Frédéric Robert. In 2014, Chef Gregoire joined Atlantis the Palm as Executive Chef of Ossiano, transforming it into one of the Middle East’s most acclaimed fine-dining restaurants. 

In 2025, Chef Gregoire launched Kraken Dubai, his first independent restaurant. Conceived as a personal manifesto under the philosophy “Where Smoke Remembers the Sea", Kraken explores the intersection of locavore, fire, fermentation, and the marine world — a mature, elemental reflection of his evolution as a chef and storyteller.
