The JANIROC family's PONS early harvest virgin olive oils have a high polyphenol content of over 500 MG/KG.
These compounds are responsible for the oil's antioxidant and anti-inflammatory properties. Research is currently being conducted on their potential anti-carcinogenic effects. Olive oil polyphenols help protect blood lipids from oxidative damage.
