Ian Baiocchi is a great exponent of Brazilian gastronomy. In 2023, with just 34 years old, he was awarded the Best Chef of the Year from Prazeres da Mesa magazine, the biggest national award. The chef is known for his versatility and entrepreneurial vision, founding and co-owning a group of five restaurants and an ice cream brand that has grown exponentially since its opening in 2020. He also won the title of best ice cream parlor in Brazil in the same edition that was consecrated as Chef of the Year. With a background in haute cuisine, Ian flirts with casualness, but it is in his tasting menus that he finds himself and conquers his fans, especially in Íz Restaurante. Imprinting a strong identity, he interprets regional cuisine not only using ingredients from its biome, but through traditional Brazilian techniques combined with all its learning in great restaurants.
