THOMAS ALLEN
Tom Allen, Chef de Cuisine at Dinner by Heston Blumenthal in Atlantis The Royal, boasts over 16 years of culinary expertise. Raised in Cheltenham, England, Tom's culinary journey began shadowing his mother in the kitchen. His career path led him to Lumiere in 2001, where he met Ashley Palmer-Watts from Heston Blumenthal's The Fat Duck. Joining The Fat Duck in 2005, Tom developed a passion for Michelin-starred kitchens.
In 2009, he joined Dinner, working with Heston Blumenthal to create historical dishes. In 2019, Tom became Head Chef at Dinner London, before relocating to Dubai in 2021 as Chef de Cuisine at Dinner by Heston. Collaborating with food historians and curators, he brings Heston's vision to life. Tom describes his cuisine as edible history, showcasing modern dishes with intricate recipes.
Working closely with Heston, Tom cherishes the continuous learning and personal connections. Beyond the kitchen, he explores the world with his family, emphasizing the importance of family both at home and in his career.
